Anghuzeh is very important in traditional Iranian medicine and there is a great global demand for it. This plant has many applications in the pharmaceutical field and has been used in the treatment of diseases for a long time. The results of the research of Angouzeh plant conducted in this field show the anti-diabetic, anti-cancer, antiviral, antibacterial and antioxidant effects. The applications of this plant in the food industry are very important, so this plant is used as an additive, flavoring or spice in the preparation and processing of various foods. Anghuzeh also has many applications in the cosmetics industry. The importance of Anghuzeh is due to the valuable gum that is obtained from cutting its roots. In recent years, due to the considerable profit from the sale of gum, the harvesting of this plant from nature has increased, and this issue leads to the extinction of the Anghuzeh generation. Anghuzeh gum contains special compounds. Essential oil is one of the main active ingredients in gum, which is used in other related industries after extraction and purification. At present, Anghuzeh gum is sold in raw form in Iran. It is hoped that with proper planning and the creation of suitable conversion industries for Anghuzeh, it will be possible to create good added value (valuation) for the country while creating employment. آنغوزه از گیاهان دارویی مهم تیره چتریان است. آنغوزه در طب سنتی ایران بسیار اهمیت داشته و تقاضای جهانی زیادی برای آن وجود دارد. این گیاه در حوزه داروسازی کاربردهای فراوان دارد و از دیرباز در درمان بیماریها استفاده شده است. نتابج پژوهش‌های انجام شده در این زمینه بیانگر اثرات ضددیابتی، ضدسرطانی، ضدویروسی، ضدباکتریایی و آنتی‌اکسیدانی گیاه آنغوزه است. کاربردهای این گیاه در صنایع غذایی بسیار مورد توجه می باشد به طوری که از این گیاه به عنوان افزودنی، طعم دهنده یا ادویه در تهیه و فرآوری های مختلف غذایی استفاده می‌شود. آنغوزه در صنایع آرایشی - بهداشتی نیز کاربردهای زیاد دارد. اهمیت آنغوزه به دلیل صمغ با ارزشی است که از تیغ زدن ریشه‌ آن به دست می‌آید. در سالیان اخیر بـه دلیل سود قابل ملاحظه حاصل از فروش صمغ، برداشت این گیاه از طبیعت افزایش یافته است و این موضوع خطر انقراض نسل آنغوزه را در پی دارد. صمغ آنغوزه حاوی ترکیبات خاصی است. اسانس از جمله مواد موثره اصلی موجود در صمغ است که پس از استخراج و خالص‌سازی در صنایع دیگر مرتبط استفاده می‌شود. در حال حاضر در ایران صمغ آنغوزه به صورت خام به فروش می‌رسد. امید است با برنامه‌ریزی‌های صحیح و ایجاد صنایع تبدیلی مناسب برای آنغوزه، بتوان ضمن ایجاد اشتغال ارزش افزوده (ارزآوری) خوبی برای کشور ایجاد کرد. https://jmpb.znu.ac.ir/article_719241_e36c0c8ae5f31eedb5dce3fbf54c5d1e.pdf
